Easy Mango Pudding

I have been buying lots of Thailand Honey Mangoes lately. It is probably the season now for these fruits. Although they are not as fragrant compared to the other varieties of mangoes, they are very sweet and juicy when ripened, and they are also relatively cheaper and affordable.


Whenever there is an abundance of mangoes in my house, I will definitely use them to make some mango puddings.


I always follow this simple recipe which is no difference from making some easy jelly. I just need to mix a pack of jelly crystals with a cup of boiling water and a can of Carnation milk, then add in the fresh mangoes, and pour into jelly cups. I usually get this "Tortally" brand of jelly crystal which is easily available from most local supermarkets and even the nearby convenient shops. However, it doesn't come with a mango flavor, so I have made do with the pineapple flavour instead. Nevertheless, it doesn't affect the taste of the mango pudding at all. This is one of our family's favourite dessert of all time.


Easy Mango Pudding

Ingredients:

1 packet (90g) of jelly crystals (pineapple flavour)
1 cup (250ml) of boiling water
1 can of Carnation Evaporated Milk (I used low fat version)
1 mango, cut into small cubes




Method:
  1. Pour a cup of hot boiling water into a bowl, stir in the jelly crystals making sure the crystals dissolved completely. (If the crystals doesn't dissolve completely, heat the mixture in a saucepan, stir till the crystals dissolve completely.) Set aside and let it cool off a little.
  2. Add in the can of evaporate milk. Stir in the mango cubes. Mix well. Spoon into jelly cups. Chill in fridge to set.

    Tip: There is no mango flavoured jelly crystals, so the closest is the pineapple flavour. After filling the jelly cups, use a teaspoon to remove air bubbles which will form on the surface, otherwise there will be unsightly bubbles on the surface of the pudding when set.

Great! I just bought 6 huge honey mangoes 2 days back, and this will be a great recipe to try rather then just eating the fruit on it's own. :) BTW, can I use agar-agar powder instead of gelatine? Just curious...

I can't agree more that the Thai honey mangoes are abundance now! I've been eating quite a lot on its own lately. Sometimes, it's still a dilemna to decide between making some desserts out of it, or eating it on its own isn't it? Perhaps I'll stock up more, then I'll be forced to make a mango pudding like what you did! At least mango pudding won't turned bad easily, unlike ripen mangoes if not consumed almost immediately! I've never heard of this variety of mango. Our grocery stores seem to only carry one variety from Mexico and I don't love them. Your pudding looks super easy and tasty!

Hi, you should use gelatin powder if you want creamy/smooth mango pudding served in restaurants. You need to puree the mango first tho. A bit more work ;)

Hi Min, are you a local? If yes, the can size should be the same, I use the whole can, which is around 300ml.

The carnation milk I bought is also 400g. So instead of using 250ml boiling water, I used 200ml and added the whole can of carnation milk so my total liquid is 600ml as compared to your 550ml.

However, it's too sweet for us. I've always thought evaporated milk is unsweetened. Will need to modify this recipe to suit our needs as kids love it.

Didn't read your comment on the evaporated milk ml, coz in your recipe just mentioned 1 can. Anyway, using my judgement, I didn't put all in. Not sure how big my can, coz i already remove the paper (to recycle the tin). BUT, it turn out good! Children love it!!

I made this pudding this morning. Smell nice, great colour but yet to try because until now, it is not set ='(

HHB, I need your advise. How long do we need to set without using gelatine in this recipe of yours? I had chill them for more than 8 hrs but they are still not set? Hmm...wondering what's wrong?

I usually chill the pudding over night and it will be ready the next day. I'm sorry, since I have not used konnyaku powder, I do not know whether it will take longer to set? The texture of the pudding maybe different too...as I think konnyaku will be more 'chewy' compared to normal jelly crystals? Do let me know after you have tasted it, hope you will like it!

Haiz..it's a failure since this morning they are still not set. :( Thus, I guess I have to add in gelatine when I try making this afternoon again. To be on a safer side, I had manage to get Tortally jelly crystal this morning & shall do both and perhaps can try to show you the "final product" using mango flavor konnyaku jelly. Wish me luck! ;)

By the way HHB, have you try any easy to made coffee pudding recipe? ;P

Hi. i tried the mango pudding recipe. As soon as i poured in the evaporated milk, it was beginning to set abit and had pudding like texture.

can i prevent this from happening? do i pour in the eva milk as soon as the crystals disappear and not wait for it to cool?

Hi Norah, the jelly crystal mixture should be left to cool off to lukewarm before adding the evaporated milk, otherwise it will form lumps (or start to set) because of the difference in temperature between the two liquid, especially if your evaporated milk is cold (did you keep it in the fridge before using?)

Hi, I happened to browse thru the web looking for some nice fingerfood recipes to make this weekend as I am celebrating my son's 5th bday. Hi Mrs Tham, I have not used agar agar, I believe the texture will be different. Agar agar would probably give a harder, 'crunchy' (I hope u know what I mean?), texture.
