You could have left the butter out for too long before you cream/beat it. When you beat the butter with sugar, was the mixture light and fluffy? Or was it very soft like mayonnaise? The other possible cause could be, did you use a tray which you just used to bake cookies and it was still hot? I have actually done this same recipe twice,,,first one i used Golden Churn block butter turned out as good, the rose held up nicely.
