I think you may not have cream the butter/sugar mixture enough. You will need to beat the butter and sugar until very creamy and fluffy before adding int the egg. As for mixing in the flour, you will need to Fold the flour into the mixture with a wooden spoon or a spatula. The mixture should be very smooth, not lumpy at all.
