However, the texture remains the same after baking. Do note that you will have to keep these cookies in air-tight containers right away, once they are cool to the tough, otherwise the koko crunch (or your milo cereal) will loose it's crisp. In order not to waste your time and effort, you can actually try baking some milo cereals in the oven to test (without the cookie dough). If the texture remains alright, you can give these cookies a go! Did you measure the ingredients correctly? The dough is not suppose to be hard at all. Or did you over mix after the flour is added? You will only need to beat it for a very short time, stop the mixer and mix by hand to form a soft dough. You should be able to shape it into small balls easily. After baking, the inside of the cookies should not be soft, they should be dry and crunchy. I believe it was under baked that's why the centre was soft. I'm glad to hear that you like my bakes :)<BR/>Normally for the genoise (sponge) cake, to ensure a very moist texture, most recipes will recommend brushing the sponge layers with syrup before spreading the cream and filling. You will also have to cover the sponge cake when you leave it in the fridge. The sponge will get dry over night. The reason is, only very little amount of oil/butter is used for this kind of sponge, the cake will not remain moist if you don't cover it. I like chiffon cake too, but I have yet to try making it.
