As for the filling, I use around 1 teaspoon. You can take a look at this video here to see how to wrap the dough: (http://www.youtube.com/watch?v=eklVKLwTB5U&feature=related). By using this method of wrapping, you can use less dough to wrap the filling, and the tart will have a thinner crust/skin. As we need to cut out the pastry, roll/re-roll, the pastry base will turn hard. Yes, you can try adding corn starch, or try baking them longer. Hope your next batch will be beter.
